Located in Sanjo, Niigata and founded in 1919. The produce high quality kitchen knives with superb grinds, great attention to detail, and awesome performance. It is ran by Kazuomi Yoshida. Many blacksmiths have apprenticed at Yoshikane including Mazaki.
Their Knives have near perfect quality control, no low spots or uneven grinds here. Most of their knives are in the middle of a workhorse and a laser, which makes them great for every user. These knives are a great go to for everyday use.
The Nashiji line from Yoshikane has beautiful aesthetics, with polished core steel, kasumi finish, and distal taper.
